Creamed Spinach

One of my favorite things on the planet is Boston Market’s creamed spinach.  And quite a while back, a friend of mine sent me an electronic cookbook, which had the basic recipes for all of our commercial favorites!  Oh Joy!  So much deliciousness in one little electronic file!

A Bowl Full of Heaven....Delicous Creamed Spinach

The recipe for creamed spinach made me so happy!  So I’ve used it as a starting basis, and created my own riff on one of the best steak sides to ever hit the planet!  Of course, the cream of celery soup is the “secret ingredient”!

Ingredients:  2 pkgs. 14 oz. Frozen Chopped Spinach, thawed and squeezed of most liquid; 1 Can Cream of Celery Soup; 1/2 Large Sweet Onion, minced fine; 2/3 stick Butter; 3 tbsp. Flour; 1 cup Heavy Cream; 1 tsp. Salt.

In a large saucepan, melt the butter.  Lightly saute the onions.  Add the flour, and stir into a roux.  Add the cream of celery soup.  Stir until a very thick gravy forms.  Add the spinach, salt, and about half the cream.  Stir.  Continue to add the rest of the cream until you’ve achieved a beautiful consistency….it may require a bit more (or less) cream.
